Re-rolling scraps yields about 30% more biscuits

How We Calculate This

This calculator works out how many biscuit shapes fit within your rolled dough dimensions, based on the cutter size and shape. It uses a simple grid layout to determine the first cut, then estimates additional biscuits from re-rolling the scraps.

The Formula

  • Grid fit (round): floor(length / diameter) x floor(width / diameter)
  • Grid fit (square): floor(length / side) x floor(width / side)
  • Re-roll bonus: ~85% of remaining dough area / cutter area

Tips for Maximum Yield

  • Roll dough to a rectangle for the most efficient cutting
  • Use offset rows for round cutters to reduce waste
  • Chill scraps before re-rolling for cleaner cuts
  • Only re-roll once to avoid tough biscuits
