How do I convert gelatine sheets to powder?

One standard gold-grade gelatine sheet weighs about 2g. So 3 sheets equals roughly 6g of gelatine powder. However, the exact weight varies by bloom grade — bronze sheets weigh more per sheet (about 3.3g) while titanium sheets weigh less (about 1.6g). What is bloom strength?

Bloom is a measure of the setting strength of gelatine. Higher bloom means stronger setting power per gram. Gold (200 bloom) is the most commonly used in UK recipes. How much water do I need to bloom gelatine?

Can I substitute agar agar for gelatine?
