How We Calculate This
This calculator uses the standard rough puff ratio of approximately equal parts flour and butter by weight, with about half as much cold water. Enter your total target weight and the calculator breaks it down into individual ingredients.
The small amount of lemon juice is optional but recommended — it relaxes the gluten and makes the dough easier to work with. Salt is calculated at 1% of the flour weight, which is standard for pastry.
